I started the Keto diet because I wanted to finally live a healthy and fulfilling life, but I didn’t want to be just eating salads and veggies all day. Bottom line, I was looking for a new diet that doesn’t sacrifice delicious meals. Does that sound familiar?

Portobellos are one of my favorite things in the world and this recipe really lets them shine. Actually I can’t think of a better way to enjoy these mushrooms than stuffing them with hot Italian sausage and cheese. It’s simply divine.

Last but definitely not least is the good ol’ Egg Roll in a Bowl! It’s fun to say and even more fun to devour. The best part of an egg roll is the inside of it. This recipe is showcasing just that. I’ll eat this meal any time of day. It makes a great leftover as well!
