Making The Cake
Preheat the oven to 350 degrees F. Line bottom of two round 8-inch cake pans with parchment paper. Butter the sides of the pans to prevent sticking. In a large bowl or stand mixer, mix the eggs, sweetener, cream, butter, and vanilla. Next, add the almond flour, baking powder, and salt. Mix until batter is smooth, scraping down the sides halfway through with a rubber spatula. Divide the batter between the pans and bake for 15-20 minutes or until a toothpick inserted into the center of the cakes comes out clean.
Remove cakes from the oven and let cool for 10 minutes before the cakes from the pans. Let the cakes cool for 30 minutes to an hour on a wire rack.
