Steak, Tomato, and Goat Cheese Recipe

Ingredients

  • 2 6 oz. top sirloin or filet mignon steaks (1 1/4 to 2 inches thick)
  • 1 large beefsteak tomato
  • 4 oz goat cheese
  • 1 cup French fried onions
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • kosher salt
  • black pepper

Instructions

  1. Liberally season all sides of the steaks with salt and pepper. Let stand at room temperature for 15 minutes.

  2. While steak is resting, make the french fried onions (link above).  This can be done up to 3 days ahead of time.

  3. Grill steak to your likeness - we prefer medium.

  4. While steak is resting, slice tomato into thick slices.  Layer slices on two plates.  Top with crumbled goat cheese.

  5. Slice steak against the grain and layer on top of goat cheese.  Top steak with french fried onions.

  6. Drizzle with olive oil and balsamic vinegar.  Season with salt to taste.
